COUNCIL RECOGNITION

KNIGHTS OF THE MONTH

April 2026

Tony Palombo

This Knight of the Month loves to cook and maybe drink a little, sometimes a little too much. Ask him to tell you the story about his garage door, hehe. He participates at many Knight’s events and makes some mean etouffee for Mardi Gras. Let us give a round of applause to Brother Knight Tony Palombo.

March 2026

Jerry Wick

This Knight of the Month is known by his signature mustache. He has a mobile smoker, which has helped us dominate SuperBowl BBQ Sunday. He participates at many Knight’s events and loves smoking and cooking. He also really enjoys leading our Quality Control taste testing, hehe! Let us give a round of applause to Brother Knight Jerry Wick.

February 2026

Ivan Brekalo

He is at every cooking event and getting his hands dirty with something. He is one of our hardest working Knights and earned the respect from the KofC BBQ Squad. In addition, he has offered to help any interested Knights receive their CCL at no cost. Having served in Law Enforcement for many years, he is very interested in securing our Masses. He also speaks French, but sometimes with his English I am like what did he say? Thank you for being a Knight and a prime example of a joyful servant. Let’s give a round of applause to Ivan Brekalo, and to all those who have served and are serving in our military and law enforcement.

January 2026

Wayne Armentrout

He is at every cooking event and getting his hands dirty with something. He is one of our hardest working Knights and earned the respect from the KofC BBQ Squad. When he joined, he kept making this big deal about not receiving the confirmation email about joining the Knights. Finally after like the 5th complaint, I said give me your phone. I went to his Junk Folder and found it in 2 seconds and verified it myself. You may not be the most tech savvy person, however, since then I am extremely thankful you are a Knight. Let’s give a round of applause to Wayne Armentrout.

December 2025

Blessed Michael J. McGivney

Blessed Michael McGivney (1852–1890) was an American Catholic priest best known as the founder of the Knights of Columbus, the world’s largest Catholic fraternal service organization. He was beatified by the Catholic Church on October 31, 2020, bringing him one step away from formal canonization as a saint.

November 2025

Linh Bui

This Knight reminds me of a younger and stronger version of myself. Linh is in choir and a new Knight. However, that did not stop him from going above and beyond during Oktoberfest. As soon as Mass let out and he was done with choir, he came straight to work. He stayed until the very end lifting the beast tables and was even making trash runs in total darkness. I hope we did not scare him off. Just kidding, I can see the Holy Spirit active in Linh and his fire is lit. Let’s give a round of applause to Linh Bui.

October 2025

SK John Hicks

SK John Hicks – This Knight does it all. 4th Degree Knight, Knights of Columbus EIM Coordinator, Online Membership Director, Austin Diocese EIM Instructor, Former Faithful Navigator, Past Grand Knight, Past District Deputy, Two Branches of the military. I guess it would be easier to state what he hasn’t done. One word of advice, its ok to say “no”. He is also an active member at pretty much every event. Thank you, John Hicks for setting the example for us younger Knights. Let’s give a round of applause to John Hicks.

September 2025

Edgar Pereira

This Knight does it all. The Holy Spirit is definitely working through Edgar. Well, maybe the Holy Spirit and a few Monster energy drinks. From Springfest to Fishfry to Garage Sale, he has made a major impact on our organization. I see a future Grand Knight in the making. We should all be thankful for his ability and willingness to help. He is also getting close to marrying the love of his life. Let’s give a round of applause to Edgar Cabbage Patch Kid Periera. Thank you, Edgar.

August 2025

David Hanson

David Hanson is a very active parishioner of SMM. Sometimes it seems like he has a special power to be in multiple places at the same time. He is a counter, usher and does MLF. As well, he is a very active Knight and held the fort down for our parish Garage Sale. What can I say, he also does Springfest setup. I want to be like David when I get older too. He has learned the secret of life, keep moving. Thank you David, for all you do for SMM and the Knights of Columbus Council 7600.

This Knight has been Knight of the Month several times and is always volunteering as a knight. He constantly shows what it means to be a team player and has gone above and beyond at many Knight’s events. He is an usher, counter at SMM and a big part of MLF and SpringFest. His wife loans us David very frequently and helps with desserts for our events like Fish Fry. He has been married to his lovely wife for a long time. I think maybe he has revealed the secret to a long happy marriage, hehe. Let’s give David Hanson and his wife a round of applause.

March 2026

Edgar and Arianna Pereira

This young Knight has shown what it means to be a team player and has gone above and beyond at many Knight’s events. He has also become a mainstay in SpringFest. He has also recently been married, despite the warning I gave him. Just kidding. He also has a lot of pull with our younger Knights Kenny Wimmer, Leander Joseph and Josh Saucedo. In addition, Cody was a fundamental provider of the heavy equipment and services to complete the construction of the pavilion. When Cody is on the move you have to watch out. I mean when I first met him, I was like what is this guy on, now I realize it was just Cody and maybe some coffee. Sylvia is just like him, and is now the Silver Angels ministry leader. They are a prime example of what a strong Catholic marriage can do for two joined individuals. Thank you Cody and Sylvia Carothers. Let’s give them a round of applause.

January 2026

Well that was until I found out he is from Chicago. Just kidding Ken. Thank you Ken and Marge Orze. Let’s give them a round of applause.

January 2026

Todd and Angie Nordin

Todd is our Council 7600 Recorder and the most dependable officer of our Council. Without hesitation he is present and takes perfect notes of our meetings. He then updates our Council 7600 Meeting Minutes and presents them to me to upload. He is skilled and always friendly, no matter what he is going through. If one word would describe him it would be strength. Thanks to Angie for loaning us Todd. Thank you Todd and Angie, let us give them a round of applause!

Micheal and Kathy Uihlein

Mike and Kathy are one of those couples when you see them together, and you know it’s a forever deal. Kathy is always at daily mass, Eucharistic Adoration, baking or busy making Rosaries. After working with Mike here at SMM, I can honestly say that the Knights and SMM are blessed to have his intellect. He brings his electrical engineering expertise and is an awesome Facilities Engineer. Although, when Mike starts unveiling his designs or ideas, most people are like whaat? He is also a major component of the Knights being able to go from a full swing event to a fully cleaned and restored Benish. This Oktoberfest he handled almost all the heavy, beast tables with minimal help. He also helps at almost every event, in some way. Let’s give a round of applause for Mike and Kathy.
